9 in (20 cm) square baking pan or 10 in round cake pan
Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
3 tsp baking powder
1/2 tsp salt
2 large eggs, room temperature
1 cup heavy whipping cream
1/4 cup canola oil
1/4 cup honey
Instructions
Preheat oven to 400°F. Place flour, cornmeal, sugar, baking powder, and salt in a mixing bowl and stir to combine. In a second bowl, beat the eggs with a hand mixer until lightened. Add cream, oil, and honey and beat well.
Make a well in dry ingredients. Pour in wet ingredients and mix with a wooden spoon until just combined (be careful not to overmix). Pour batter into greased baking pan and smooth the top.
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Serve warm with butter or clotted cream.
